If there’s something more powerful than our love of new and tasty food, it must be the love of sharing it with others.
As much as I like to think that I am a woman of all talents, cooking isn’t my brightest.
This might come as a surprise to those who have tasted my preparations, but it is because one of my better talents is recognizing recipes with unavailable potential.
My Provincial Feta Pastry has become one of my signature contribution for all occasions. A recipe that never failed to please guests of all ages and see them asking for more.
It takes 5 minutes to prepare and 35 minutes to cook, in an oven set to 180°C.
One puff pastry,
Two generous tablespoons of crème fraîche (or yoghurt for a healthier option) as a base,
One big tomato,
5 ounces of Feta cheese,
Salt and Pepper,
Preheat the oven,
Unroll your pastry on an oven form (I always recommend using baking paper),
Spoon the Crème fraîche over the pastry,
Sliced and arrange the tomato on top,
Sprinkle the feta,
Add oregano, salt and pepper.
It is all ready for the oven.
Serve it with honey on the side.
